Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton leg
Provides the main meat, which becomes tender and flavourful through slow, moist stewing.
Onions
Add sweetness and body to the stew as they soften and release their flavour into the liquid.
Carrots
Add natural sweetness and colour, and hold their shape through long stewing.
Turnips
Contribute a mild sweetness and starchy texture that thickens the gravy slightly.

The step that matters

Stew until the mutton is tender. Mutton from a tough cut needs long, gentle, moist cooking so its connective tissue breaks down. Boiling hard toughens the meat and can leave the vegetables broken down.
