Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Binds the bread crumb coating so it sticks to the cutlets.
Bread crumbs
Forms a crisp, golden coating around the lamb when fried.
Lemon zest
Adds bright aromatic flavour that cuts the richness of the lamb.

The step that matters

Frying until light brown. Frying in hot fat browns the crumb coating and cooks the lamb through. Too low a heat leaves the coating greasy and pale, while too high a heat burns the crumbs before the meat is done.

Swap the nutmeg

How well each one fits the dish's main ingredients (lamb, egg, bread, parsley, lemon, pepper, beef):

  1. Marjoramfits better
  2. Thymefits better
  3. Tarragonfits about as well
  4. Nutmegthe original

Fit is the average pairing score against lamb, egg, bread, parsley, lemon, pepper, beef. Candidates are from the same food group and used in at least 100 recipes.
