Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw veal
Provides the main lean meat that forms the body of the meatball.
Veal fat
Adds moisture and richness so the meatballs stay tender when cooked.
Egg
Binds the mixture so it holds together when shaped and boiled.
Flour
Helps the rolls keep their shape and gives the cloth a dusted surface.
Onion
Adds aromatic flavour to the mixture as it simmers in milk.

The step that matters

Rub the mixture through a coarse sieve. Pushing the cooked and raw meat through a sieve breaks up fibres and fat into a fine, even texture. Skipping or rushing this leaves lumps, which makes the rolls uneven and less tender.

Swap the white pepper

How well each one fits the dish's main ingredients (onion, pepper, egg, veal, flour):

  1. Turmericfits better
  2. Parsleyfits better
  3. Capersfits better
  4. White pepperthe original

Fit is the average pairing score against onion, pepper, egg, veal, flour. Candidates are from the same food group and used in at least 100 recipes.
