  1. Cut the chitterlings open with scissors and wash them thoroughly.

  2. Soak them in a mixture of salt and water overnight.

  3. Wash them well, then parboil and cut into small pieces.

  4. Dip the pieces into a thick batter seasoned with pepper, salt, and a little white wine.

  5. Fry them in beef dripping until light brown.

  6. Serve with a fringe of fried parsley.
