Potato Patties

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Wash and scrape the rind off the potatoes.

  2. Cut off the top and scoop out the insides.

  3. Mix the potato insides with veal, ham, cream, nutmeg, lemon peel, salt, pepper, and mushroom catsup.

Fill and bake

  1. Fill the potato shells with the mixture and replace the tops.

  2. Trim the bottoms slightly to help them stand upright.

  3. Place them in a pudding dish with butter at the bottom.

  4. Bake in a 400°F (200°C) oven until heated through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the edible shells and bulk of the patties, holding the filling as they bake.
Veal
Adds savory meat body and a firm, tender texture to the filling.
Ham
Contributes salty, savory flavor that seasons the meat filling.
Cream
Adds moisture and richness, keeping the filling soft and smooth.
Butter
Adds fat and flavor to the pan and helps the potato surfaces brown.

The step that matters

Trim the bottoms slightly. The potatoes must sit upright so the filling stays inside the shells. A flat base also gives stable contact with the dish while baking.
