Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean pork
Provides the meaty structure of the filling.
Inward pig fat
Adds moisture and richness as it melts during cooking.
Stale bread crumb
Soaks up moisture and helps the filling stay tender.
Egg yolks
Bind the mixture so it holds together when cooked.

The step that matters

Mix the filling thoroughly. Thorough mixing spreads the fat, meat, bread and egg evenly, so every bite has the same texture and the binder can hold the mixture together during cooking.
