What each ingredient does

Chicken
Provides the main meat, which becomes tender as it stews in the stock.
Egg yolks
Enrich and thicken the sauce, giving it a smooth, rich body when stirred in gently.
Cream
Adds richness and moisture, softening the sauce's flavor and texture.
Flour
Thickens the white stock into a sauce as it cooks with the butter.
White stock
Forms the liquid base of the sauce and cooks the chicken gently.
Butter
Adds fat and flavor, and helps thicken the sauce with flour.

The step that matters

Adding the egg yolk and cream. Egg yolks can curdle if they get too hot. Beat them into the cream, then stir gradually into the warm sauce off the heat or at low heat so they thicken smoothly rather than scramble.

Swap the onion
