What each ingredient does

Eggs
Set when cooked and bind the omelet and coating together.
Bread crumbs
Form a crisp, golden crust when fried.

The step that matters

Coat each dipped piece with bread crumbs. The beaten egg is the glue that holds the crumbs on. If pieces are not dipped evenly or are left wet, the crumbs fall off and the coating fries unevenly.

Swap the onion

How well each one fits the dish's main ingredients (egg, parsley, pepper, bread):

  1. Capsicumfits better
  2. Carrotfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against egg, parsley, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
