Ingredients

Directions

Prepare the birds

  1. Truss the partridges as you would for boiling.

  2. Pound the livers with double the amount of fat bacon and the bread crumbs boiled in milk.

  3. Add chopped parsley, thyme, shallots, mushrooms, pepper, salt, grated lemon peel, and mace to the mixture.

  4. Stuff the birds with the mixture and tie them at both ends.

Stew

  1. Line a stew pan with slices of bacon and place the stuffed partridges inside.

  2. Add stock, white wine, onions, sweet herbs, and a few blades of mace.

  3. Stew gently until the partridges are tender.

Finish the sauce and serve

  1. Remove the partridges, strain the sauce, and thicken it with flour and butter.

  2. Heat the sauce and pour it over the partridges before serving.

What each ingredient does

Partridges
Form the main body of the dish, becoming tender and flavorful as they stew.
Fat bacon
Adds fat and savory flavour, keeping the stuffing moist and the birds from drying.
Bread crumbs
Soaked in milk, they bind the stuffing and keep it soft and moist.
Butter
Combined with flour to thicken the strained sauce into a smooth, rich coating.
Flour
Thickens the strained stock with butter, giving the sauce body.
White wine
Adds acidity and aroma to the stewing liquid, balancing the rich meat.

The step that matters

Gently stewing the partridges until tender. A gentle simmer lets the connective tissue soften slowly. Boiling hard toughens the meat and can break the birds apart before they are cooked through.
