A Bean Pudding

Ingredients

Directions

  1. Remove the skins from the beans.

  2. Pound the beans in a mortar.

  3. Season with coarse sea salt and black pepper.

  4. Add a piece of butter.

  5. Tie the mixture lightly in a buttered and floured cloth.

  6. Place it in boiling water and boil for 30 minutes.

  7. Squeeze the water from the pudding cloth.

  8. If a different shape is desired, place the cloth with the pudding into a mold, press down, and let it stand for a few minutes.

  9. Invert the mold onto a serving dish to turn out the pudding.
