Another Puff Paste

Ingredients

Directions

  1. Make a stiff paste with the flour and cold water; knead well and divide into two pieces.

  2. Roll out each piece to about ¼ inch thick.

  3. Remove butter from water and shape it into a flat piece.

  4. Flour one piece of paste, place the butter on it, then flour and cover with the other piece of paste.

  5. Flatten slightly with a rolling pin, then roll out again, dusting with flour before and after rolling.

  6. Fold in the sides, roll it up, and repeat rolling, folding, and dusting until the butter is fully incorporated.

  7. When ready for the final roll, make it ¼ inch thick and place it over the dish to be covered.

  8. Dip the paste cutter in flour and cut around the rim of the dish.

  9. Set the cover aside and cut a border for the rim of the dish; wet it with water and attach it.

  10. Brush the border with a little water and place the cover on top.

  11. Use the paste cutter to notch the edge and make a hole in the center.

  12. Take a small piece of paste, roll it thin, dust with flour, fold it in four, pinch it, and place it in the hole.

  13. Cut it twice across and turn out the folds to resemble leaves.
