Ingredients

Directions

  1. Chop the cold loin of veal into small pieces.

  2. Season the meat with minced parsley, white pepper, coarse sea salt, grated lemon peel, and nutmeg.

  3. In a saucepan, combine the stock with a bit of butter and flour to thicken it.

  4. Add the lemon pickle and white wine to the stock mixture.

  5. Make a paste with the fat from the loin and an equal amount of flour.

  6. Rub the fat and flour together, then mix in a little cold water.

  7. Roll out the paste two or three times and line the sides of a pie dish.

  8. Fill the dish with the seasoned meat and cover it with the remaining paste.
