Why it works: Beetroot and carrot match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 699 recipes. Both carry 2-isobutyl-3-methoxypyrazine, which smells green bell pepper, earthy. The science ↓

Solid Veal Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the veal

  1. Stew the knuckle of veal in veal stock until tender and jelly-like.

  2. Let it cool.

  3. Pull the meat and gristles into small bits.

Assemble the pie

  1. Butter a pie dish.

  2. Arrange the yolks of hard-boiled eggs and white parts cut into rings or strips at regular intervals.

  3. Add bits of meat and gristle.

  4. Sprinkle with a mixture of white pepper, salt, and grated nutmeg.

  5. Pour a little gravy over the mixture.

  6. Add more egg and small bits of beetroot, green pickles, and carrot.

  7. Season with more meat seasoning.

  8. Pour in all the gravy.

  9. Fill the shape.

Bake and serve

  1. Bake in a 400°F (200°C) oven for 20 minutes.

  2. Let it cool completely.

  3. Turn it out.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Knuckle of veal
Gelatinous connective tissue turns tender and jelly-like during long stewing, giving the filling body and moisture.
Hard-boiled eggs
Yolks and whites set firm when cooked, giving the filling structure and visual contrast when sliced.
Veal gravy
Adds moisture and savoury depth, keeping the filling from drying out in the oven.
Beetroot
Adds colour and a mild sweetness to the filling.

The step that matters

Let it cool completely. The veal gravy is rich in dissolved gelatin from the stewed knuckle. It sets as it cools, so the pie holds its shape when turned out. Cutting or turning out while still warm can cause it to collapse.

Flavor stand-ins for the white pepper

How well each one fits the dish's main ingredients (veal, nutmeg, egg, beetroot, carrot):

  1. Parsleybetter flavor fit
  2. Tarragonbetter flavor fit
  3. Cinnamonbetter flavor fit
  4. White pepperthe original

Fit is the average pairing score against veal, nutmeg, egg, beetroot, carrot. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
