Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Seville oranges
Provide the bitter, aromatic pulp and peel that flavour the pudding.
Egg yolks
Set the filling into a rich, custard-like texture when baked.
Melted butter
Adds fat for richness and a smoother, softer texture.
Loaf sugar
Sweetens the orange paste and helps preserve it.

The step that matters

Beat the mixture for about 30 minutes. Long beating blends the orange paste evenly with the eggs and butter so the filling bakes smooth rather than separating. Under-beating leaves streaks and uneven setting.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg, butter, white wine, rose):

  1. Vanillafits better
  2. Lemonfits better
  3. Raspberryfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg, butter, white wine, rose. Candidates are from the same food group and used in at least 100 recipes.
