Tapioca Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the tapioca

  1. Wash the tapioca and soak it in warm water for 1 hour.

  2. Strain off the water and mix the tapioca with the beaten egg yolks, egg whites, milk, nutmeg, white wine, and brown sugar.

Bake

  1. Pour the mixture into a baking dish and bake at 350°F (175°C) for about 30-40 minutes, with or without puff pastry around the edges.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during soaking and baking, thickening the pudding into a soft, set texture.
Egg yolks
Enrich the custard and help it set into a creamy, tender texture.
Egg whites
Add structure and lift, helping the pudding hold its shape as it sets.
Milk
Provides the liquid base and moisture that the tapioca absorbs and the eggs set.
White wine
Adds acidity and aroma that balance the sweetness of the pudding.

The step that matters

Bake at 350°F (175°C) for about 30-40 minutes. Eggs set as they heat, so underbaking leaves the pudding runny while overbaking can make the custard curdle or turn grainy. Watching for a set centre helps achieve a smooth texture.

Swap the nutmeg

How well each one fits the dish's main ingredients (egg, milk, white wine, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Tarragonfits less well
  4. Gingerfits less well

Fit is the average pairing score against egg, milk, white wine, sugar. Candidates are from the same food group and used in at least 100 recipes.
