What each ingredient does
- Isinglass
- Gelatin-like setting agent that firms the liquid into a sliceable jelly as it cools.
- Raspberries
- Provide the main flavour, colour and fruit body of the flummery.
- Powdered sugar
- Sweetens the mixture and balances the sharpness of the vinegar and fruit.
- White wine vinegar
- Adds acidity that brightens the raspberry flavour.
The step that matters
Dissolving and combining the isinglass. Isinglass must be fully dissolved before it is mixed into the hot fruit, so it distributes evenly. Once the mixture is boiled again, it must be cooled and refrigerated undisturbed so the protein network can form a firm, even set.
