What each ingredient does

Gooseberries
Provide the fruit flavour, and their skins and seeds supply pectin that helps the preserve set.
Granulated sugar
Sweetens the preserve and helps it thicken and set as it boils.

The step that matters

Boil until perfectly clear. Underboiling leaves the preserve runny because the sugar and pectin have not concentrated enough to set. Overboiling darkens the colour and can make the set too stiff, so watch the mixture closely.
