What each ingredient does

Raspberries
Provide the main flavor and aroma, and natural pectin and acid that help the jelly set.
White currants
Add tartness and natural pectin, supporting a firm set and bright acidity.
Granulated sugar
Sweetens the jelly and, with the fruit's pectin and acid, helps it gel.

The step that matters

Skimming foam during repeated boiling. Foam contains air and impurities that cloud the jelly. Skimming it off after each boil keeps the finished jelly clear and glossy.
