What each ingredient does

Damsons
Provide the fruit juice that sets into a firm, sliceable jelly-like cheese.
Loaf sugar
Sweetens the juice and helps it set into a firm, sliceable jelly as it thickens.

The step that matters

Boil until a jelly consistency is reached. Sugar and fruit pectin set into a gel only when enough water has evaporated and the mixture reaches the right concentration. Stopping too early leaves a soft, runny cheese that will not hold its shape.
