Another Way to Make Soda Water

Ingredients

Directions

Make the solutions

  1. Dissolve 1 teaspoon of carbonate of soda in ½ cup of cold water in a tumbler.

  2. Dissolve ¾ teaspoon of tartaric acid in ½ cup of cold water in a separate tumbler.

Combine and serve

  1. Pour the soda mixture into the acid mixture and drink immediately while it effervesces.

  2. For a variation, use citric acid instead of tartaric acid, and adjust the quantity to taste.

  3. For a warming tonic, add a small amount of brandy or white wine, or use tepid water.

What each ingredient does

Carbonate of soda
Reacts with the acid to release carbon dioxide, which makes the drink fizz.
Tartaric acid
Provides the sour acid that reacts with the soda to produce bubbles.

The step that matters

Drink immediately after combining. The carbon dioxide bubbles form as soon as the soda and acid mix and escape quickly from the liquid. Waiting lets the fizz fade, so the drink loses its effervescence.
