Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's feet
Release gelatin into the cooking liquid, helping the mixture set firm when cooled.
Head of meat
Provides the main body of meat that is minced and held together in the set mixture.
Onions
Add savoury depth and sweetness to the cooking liquid as it simmers.

The step that matters

Strain the cooking liquid over the minced meat and simmer gently for 30 minutes. Gentle simmering keeps the minced meat tender and lets its flavour blend with the liquid. Because the set depends on gelatin from the bones, the liquid must be well reduced and seasoned before it cools, or the mould may not hold firm.
