Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and 14,037 recipes mention both. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Neats Feet Soup

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare and braise

  1. Cut the neat's feet as you would a calf's head.

  2. In a stone jar, combine the neat's feet, pickled pork, broth, lemon juice and rind, and chopped parsley and herbs.

  3. Place the jar in a 350°F (175°C) oven.

Finish and serve

  1. Once removed from the oven, add the strong gravy and white wine.

  2. Cut the meat into bits and add hard-boiled eggs and forcemeat balls.

  3. Season with cayenne pepper and coarse sea salt.

What each ingredient does

Neat's feet
Provide gelatin-rich meat and body that thickens the soup as it cooks.
Pickled pork
Adds salty, savoury depth to the broth.
Broth
Forms the liquid base that carries the flavour of the soup.
Strong gravy
Deepens the colour and meaty richness of the finished soup.
White wine
Adds acidity and aroma that brighten the rich broth.
Hard-boiled eggs
Add soft, mild protein pieces that give the soup substance.

The step that matters

Adding the gravy and wine after the oven. Gravy and wine are added once the jar leaves the oven so their flavours stay fresh and bright rather than being dulled by long cooking. Adding them too early can make the soup taste flat or overly reduced.

Flavor stand-ins for the parsley

How well each one fits the dish's main ingredients (pork, lemon, white wine, egg, pepper):

  1. Thymeabout as good a flavor fit
  2. Marjoramabout as good a flavor fit
  3. Parsleythe original
  4. Tarragonabout as good a flavor fit

Fit is the average pairing score against pork, lemon, white wine, egg, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
