Fillet of Beef Braised

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat your oven to 350°F (175°C).

  2. In a stewpan, add the gravy and slices of ham.

  3. Place the rolled beef on top of the ham.

  4. Cover the beef with chopped carrots, celery, button onions, pickled chili, sliced gherkin, sweet herbs, salt, mace, and allspice.

Braise and finish

  1. Simmer until the beef is tender.

  2. Brown the beef before the fire or with a salamander.

  3. Skim and season the sauce.

  4. Serve the meat, sauce, and vegetables together in the same dish.

What each ingredient does

Inside sirloin of beef
Is the main cut that becomes tender through slow simmering in liquid.
Gravy
Provides the liquid that braises the beef and forms the base of the sauce.
Ham
Adds savory, salty flavor to the liquid and the sauce beneath the beef.
Carrots
Add sweetness and body to the sauce as they soften during simmering.
Button onions
Soften and add sweetness and aroma to the braising liquid.
Pickled chili
Adds sharp heat and acidity that cut through the richness of the sauce.

The step that matters

Simmer until the beef is tender. Beef fillet is a lean cut with connective tissue that needs long, gentle simmering to break down. Boiling hard toughens the meat and can dry the surface, so keep the liquid at a low, steady simmer.

Swap the mace

How well each one fits the dish's main ingredients (beef, ham, carrot, celery, onion, allspice):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against beef, ham, carrot, celery, onion, allspice. Candidates are from the same food group and used in at least 100 recipes.
