Directions

  1. Fry the beef and onions in flour until light pale brown, avoiding blackening.

  2. Transfer the browned mixture to a stewpan and add ½ cup boiling water, then boil.

  3. Pour the mixture over the meat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the meat flavour and juices that are drawn out to make the gravy.
Onions
Add sweetness and savoury depth as they brown with the flour.
Flour
Browns with the fat and thickens the liquid into a gravy.
Ham or gammon of bacon
Adds salty, smoky meat flavour to the stock.

The step that matters

Fry the beef and onions until light pale brown. Browning builds flavour through the Maillard reaction, but blackening turns the flour and meat bitter, so stop once the colour is light and pale.
