What each ingredient does

Almonds
Browned and pounded into a cream, they thicken the sauce and add a nutty flavour.
Cream
Adds richness and a smooth, silky texture to the sauce.
Lemon juice
Adds acidity that brightens the finished curry.
Turmeric
Gives the curry its yellow colour and a warm, earthy flavour.
Chicken
Provides the main protein; simmering in the sauce makes it tender and flavourful.

The step that matters

Frying the almonds. Almonds go from golden to bitter within moments. Browning them gently and watching closely develops a nutty flavour, and removing them from the heat in time prevents a burnt, bitter taste in the sauce.
