French Beans

Ingredients

Directions

  1. Cut off the ends and stalks of the French beans and divide them in half or shred them.

  2. Soak the beans in saltwater until the saucepan boils, then add the beans with some salt.

  3. Once cooked, serve immediately to preserve their green color.

  4. Alternatively, when half done, drain the beans and add them to 2 tablespoons of strained broth.

  5. Add a little cream, butter, and flour, then stew gently until tender.

  6. For scarlet runners, boil them for 20 minutes or until tender.

  7. To prepare, place them in a dripping pan under roasting meat, add pepper and salt, or mince and stew them in beef gravy.

  8. For dwarf scarlet runners, boil in soft water to avoid toughening.

  9. In a stewpan, cook finely shredded onion with a piece of butter rolled in flour until tender.

  10. Add the beans and a little hot water, stirring until it simmers.

  11. Finish with salt, a teaspoon of vinegar, minced chives or shallot, and enough parsley for color.

  12. Serve the beans very hot, either in a covered dish or under roast mutton.
