What each ingredient does

Brisket or beef
Provides the main meat, which becomes tender through long stewing and then pounds smooth.
Saltpetre
Cures the meat, helping it keep its pink colour and firm texture during the two-day rest.
Clarified butter
Adds fat and richness, carrying flavour and giving the pounded meat a smooth, spreadable texture.
Suet
Adds fat during stewing, keeping the meat moist and adding savoury richness.
Sugar
Balances the salt in the cure and helps round out the meat's flavour.

The step that matters

Pounding the meat smooth with the butter. The meat must be cut small and pounded fully so the fat and seasonings blend evenly. Adding the butter gradually lets it emulsify into the meat, giving a smooth texture rather than a greasy, grainy one.
