Apple or Gooseberry Souffle

Oven, in the book's wordsA slack oven

Ingredients

Directions

The book says “a slack oven”. The 300°F in the steps is the modern equivalent, not the book's own figure.

  1. Scald and sweeten the fruit.

  2. Beat the fruit through a sieve and place it in a tart dish.

  3. When cold, pour a rich custard (made from milk and egg yolks) over the fruit, about 2 inches deep.

  4. Whip the egg whites to stiff peaks and lay them in small rough pieces on top of the custard.

  5. Sift fine sugar over the egg whites.

  6. Bake in a slow oven (300°F / 150°C) for a short time.
