What each ingredient does

Mushroom ketchup
Provides concentrated savory, umami depth that forms the sauce's base flavor.
Black pepper
Adds sharp, pungent heat that balances the savory richness.
Minced shallot
Contributes mild allium sharpness that mellows and infuses the liquid during steeping.
Chili vinegar
Adds acidity that brightens the sauce and helps extract flavor from the solids.

The step that matters

Warm steeping and the week-long rest. The warm 24-hour infusion starts extracting flavor from the spices, shallot and liquids, and the extended standing lets those flavors blend and mellow. Skipping or shortening these stages leaves the sauce harsh and unbalanced.

Swap the allspice

How well each one fits the dish's main ingredients (pepper, shallot, mushroom, ketchup, port wine, vinegar):

  1. Tarragonfits better
  2. Thymefits better
  3. Marjoramfits about as well
  4. Allspicethe original

Fit is the average pairing score against pepper, shallot, mushroom, ketchup, port wine, vinegar. Candidates are from the same food group and used in at least 100 recipes.
