Artichokes a LA Barigoule

Ingredients

Directions

  1. Prepare the artichokes by boiling them for 10 minutes and removing the choke.

  2. Make a filling with onions, parsley, mushrooms, minced veal or poultry, and grated bacon; fry in butter to create forcemeat.

  3. Fill the artichokes with the forcemeat.

  4. Place the filled artichokes in a pan with butter and stew them on low heat until cooked through.

  5. Serve the artichokes alone or with sauce blanche, or to your taste.

  6. For a richer flavor, you can use strips of bacon instead of butter.

  7. Alternatively, serve boiled artichokes with oil and vinegar.
