What each ingredient does

Chicken
Provides the main protein and browns to add savory flavor to the dish.
Butter
Browns the chicken and adds rich flavor to the pan.
Flour
Thickens the pan liquids into a smooth sauce.
White wine
Adds acidity and aroma that brighten the sauce.
Chicken stock
Supplies liquid that forms the body of the sauce.
Mushrooms
Add earthy flavor and a tender texture to the sauce.

The step that matters

Add flour to the pan and stir until smooth. Flour stirred into hot fat must be blended evenly, or it forms lumps instead of a smooth roux that thickens the sauce evenly when liquid is added.
