Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Absorbs water and swells as it cooks, giving the pudding its body and soft, set texture.
Currants or sultana raisins
Add concentrated sweetness and chewy pockets of fruit throughout the pudding.

The step that matters

Tie the cloth securely, leaving room for swelling.. Rice absorbs water and expands as it cooks. If the cloth is tied too tightly, the swelling is restricted, which can make the pudding dense or cause the cloth to burst.

Swap the currant

How well each one fits the dish's main ingredients (rice, flour, butter, sugar):

  1. Raisinfits better
  2. Vanillafits better
  3. Coconutfits better
  4. Currantthe original

Fit is the average pairing score against rice, flour, butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
