Meat Puffs

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Roll out the pastry as thinly as possible.

  2. Mince the cold meat very finely and season it.

  3. Cut the pastry into rounds and wet the edges.

  4. Cover half of each round with the meat, then fold the other half over.

  5. Press and pinch the edges together.

  6. Flour the puffs and fry until golden brown, or bake in a 400°F (200°C) oven.
