What each ingredient does

Young pork
Provides the main meat, which becomes tender through long simmering and absorbs the sauce.
Partially roasted fowl
Adds more meat and rich flavour to the stew as it simmers in the sauce.
Cassareep
Gives the sauce its dark colour and deep, slightly bittersweet flavour.
Moist cane sugar
Adds sweetness and helps the sauce darken and become glossy as it cooks.
Cayenne pepper
Adds heat that builds gradually through the long simmering.

The step that matters

Simmering over several days. Repeated boiling and long, gentle simmering break down the connective tissue in the meat and let the sauce deepen and mellow. Cooking too briefly leaves the meat tough and the flavour flat.

Swap the shallot

How well each one fits the dish's main ingredients (pork, onion, sugar, pepper):

  1. Capsicumfits better
  2. Potatofits better
  3. Mustardfits better
  4. Shallotthe original

Fit is the average pairing score against pork, onion, sugar, pepper. Candidates are from the same food group and used in at least 100 recipes.
