Potato Cutlets Aux Tomates

Ingredients

Directions

  1. Season the mashed potatoes with salt and pepper, then spread them on both sides of the mutton slices.

  2. To prepare the tomatoes, remove their skins by plunging them into hot water.

  3. Stew the tomatoes in a large saucepan, then add 1 or 2 eggs (1 egg for every 4 large tomatoes) and stir until the mixture resembles scrambled eggs.

  4. Arrange the tomato mixture in the center of a dish and place the fried cutlets, golden brown, around the tomatoes.
