Why it works: Almond and vanilla match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 3,961 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓

Almond Pastry

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch and finely chop the almonds.

  2. Mix the chopped almonds with the sugar.

  3. Beat the egg whites until soft peaks form.

  4. Gently fold the egg whites into the almond mixture.

  5. Add the cornflour and vanilla, and mix well.

  6. Spread the mixture thinly on a well-greased baking sheet.

Bake and shape

  1. Bake in a moderate oven at 350°F (175°C) for 15 to 20 minutes.

  2. Once cooked, cut into rounds or oval shapes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the main body and nutty flavour of the pastry.
Egg whites
Whip into foam to lighten the mixture and bind it together.
Castor sugar
Sweetens the pastry and helps it brown as it bakes.
Cornflour
Adds starch that helps the pastry set and hold its shape.

The step that matters

Folding in the egg whites. Folding gently keeps the air beaten into the whites, which lightens the mixture. Overmixing knocks out that air, so the pastry bakes up denser and flatter.

Swap the almond

How well each one fits the dish's main ingredients (sugar, vanilla, egg):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Hazelnutfits less well
  4. Macadamia nutfits less well

Fit is the average pairing score against sugar, vanilla, egg. Candidates are from the same food group and used in at least 100 recipes.
