Mushroom Meringues

Oven, in the book's wordsA cool oven

Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare a stiff meringue mixture.

  2. Grease a baking sheet with white wax or a little salad oil, then dust with castor sugar.

  3. Pipe the meringue mixture onto the sheet in rounds the size of a mushroom cap, and smaller pieces for the stalks.

  4. Dust with icing sugar and bake in a cool oven at 300°F (150°C) for 2 to 3 hours until dry and crisp.

  5. Make a small hole in the center of the larger pieces, brush with white of egg, and dip in grated chocolate.

  6. Attach the stalks to the caps using white of egg or royal icing.

  7. Let them dry in the oven or sun.

  8. Serve on a bed of whipped cream flavored with vanilla and garnish with maidenhair fern.
