Why it works: Cream and sugar are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Tapioca
- Swells and thickens the milk and cream into a soft, creamy set.
- Gelatine
- Helps the pudding hold its shape when chilled.
- Milk and cream
- Provide the liquid base and richness of the pudding.
The step that matters
Simmering with the gelatine and tapioca. Tapioca and gelatine must fully dissolve so the pudding sets smoothly. Undissolved starch leaves a grainy texture, and gelatine that is not fully dissolved can set unevenly.
Swap the almond
How well each one fits the dish's main ingredients (milk, cream, sugar):
- Almondthe original
- Chestnutfits about as well
- Pistachiofits about as well
- Hazelnutfits less well
Fit is the average pairing score against milk, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
