Ginger Wine

Ingredients

Directions

  1. Boil the water with the fine sugar and ginger in a bag for about 30 minutes, skimming off the scum.

  2. Place the raisins in a tub with the thinly pared lemon rinds and pour the boiling liquid over them. Let it cool.

  3. When lukewarm, add toast spread with barm and let it sit for 24 hours.

  4. Transfer the mixture to a cask, squeeze the lemon juice over the refined sugar, and add it to the cask along with the dissolved isinglass and brandy.

  5. Loosely stop the cask until fermentation is complete, then seal it tightly.
