Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Arrowroot
Thickens the milk into a smooth, set custard as it boils.
Egg
The yolk enriches and helps set the custard; the whipped white adds lightness.
Milk
Forms the liquid base that the arrowroot thickens into the pudding.
Castor sugar
Adds sweetness and dissolves smoothly into the hot custard base.

The step that matters

Boil the arrowroot mixture. Arrowroot needs to reach a boil to thicken fully; under-boiling leaves the pudding thin and runny, while the starch gelatinizes as it heats.

Swap the arrowroot
