Ox-tail Soup

Ingredients

Directions

Prepare

  1. Soak the ox tails in warm water while preparing the vegetables.

  2. In a large stew pan, combine the ox tails, cloves, onions, allspice, black pepper, and cover with cold water.

Make the broth

  1. Skim off any scum that rises, then cover the pot and simmer gently for about 2 hours until the meat is tender.

  2. Remove the meat from the bones and cut it into neat mouthfuls.

  3. Skim the broth and strain it through a sieve.

Thicken and finish

  1. For a thickened soup, mix the fat with enough flour to make a paste in a clean stew pan over heat.

  2. Gradually add the broth while stirring to combine, then let it simmer for another 30 minutes.

  3. Strain the soup again into a clean stew pan, add the meat, mushroom ketchup, wine, and season with salt.

What each ingredient does

Ox tails
Provide the meat and gelatin-rich body that gives the soup its richness.
Fat from broth
Combined with flour to form a roux that thickens the soup.
Flour
Forms a paste with the fat that thickens the broth as it is added.
Onions
Build savoury sweetness and aromatic depth in the broth during long simmering.
Wine
Adds acidity and aromatic depth to the finished soup.
Mushroom ketchup
Adds concentrated savoury, umami flavour to the finished soup.

The step that matters

Adding the broth to the roux gradually. Adding liquid slowly while stirring keeps the flour dispersed, so starch granules hydrate evenly and the soup thickens smoothly without lumps.

Swap the onion

How well each one fits the dish's main ingredients (clove, allspice, pepper, flour, mushroom, ketchup, wine):
