Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Capers
Provide the sharp, briny flavour that defines the sauce.
Melted butter or thickened gravy
Forms the smooth body of the sauce and carries the capers.
Vinegar
Adds acidity that brightens the rich butter and balances saltiness.

The step that matters

Stir gently to avoid separation. Butter is an emulsion of fat and water. Vigorous stirring or overheating can break it, leaving greasy droplets instead of a smooth sauce.

Swap the capers

How well each one fits the dish's main ingredients (vinegar, butter):

  1. Tarragonfits better
  2. Garlicfits about as well
  3. Parsleyfits about as well
  4. Capersthe original

Fit is the average pairing score against vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
