Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Gravies and Sauces

Ingredients

Directions

  1. In a stewpan, combine savory, parsley, lemon peel, allspice, and black pepper.

  2. Cover and simmer gently for about 2 hours.

  3. Strain the mixture through a sieve into a basin.

  4. In a clean stewpan, melt butter over low heat.

  5. Gradually add flour to the melted butter, stirring until well combined.

  6. Pour in a little of the strained gravy and mix well.

  7. Add the remaining gravy gradually, stirring continuously.

  8. Simmer for 15-20 minutes, skimming off any fat that rises.

  9. When thickened to the consistency of cream, strain through a fine sieve.

  10. For added flavor, mix in liver, mushroom ketchup, lemon juice, lemon rind, port, and cayenne pepper as desired.
