What each ingredient does

Sugar
Sweetens the fruit and, dissolved in water, forms the syrup that preserves its shape and clarity.
Green gooseberries
Provide the fruit itself, which turns tender and clear as it simmers in the syrup.
Water
Dissolves the sugar to make the syrup in which the fruit cooks.

The step that matters

Simmering the gooseberries in syrup. Simmering too hard or too long can break the fruit apart and cloud the syrup. A gentle simmer for the stated 5 to 7 minutes lets the fruit turn tender and clear while keeping its shape.
