Brioche

Ingredients

Directions

  1. Mix 4 ounces of flour, ½ ounce of fresh yeast, and 2½ ounces of warm water to form a soft paste. Cover and let it rise until doubled in size.

  2. On a clean surface, place the remaining 12 ounces of flour and make a well in the center. Add butter, salt, milk or cream, and eggs.

  3. Gradually mix in the flour to form a paste. Knead well, incorporating the risen leaven without overworking.

  4. Cover the paste with a cloth in a bowl and let it rise in a warm place for 12 hours.

  5. If the paste is too soft, add more flour; if too firm, add more eggs. It should be slightly finer than bread dough.

  6. Press out the dough and fold it 5 or 6 times, then let it rest for another 3 to 4 hours covered with a cloth.

  7. Before placing the dough in molds, mix in raisins and saffron if desired.
