Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat that becomes tender and moist during long, gentle steaming.
Butter
Adds richness and fat, giving the cooking liquid a smoother, rounder mouthfeel.
Lemon juice
Adds acidity that brightens the flavour and balances the richness of the butter.

The step that matters

Half an hour before it's done, add the butter and lemon juice.. Adding butter and acid late keeps the butter from separating or greasing out over the full cook, and keeps the lemon flavour fresh rather than cooked off.

Swap the mace

How well each one fits the dish's main ingredients (veal, pepper, nutmeg, lemon, butter, flour):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Sagefits better
  4. Macethe original

Fit is the average pairing score against veal, pepper, nutmeg, lemon, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
