Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Butter a baking pan.

  3. Lay the cod in the pan. Add the bundle of sweet herbs and the onion with six cloves.

  4. Sprinkle with black pepper, white pepper and coarse sea salt. Pour in the water.

  5. Dust the fish with flour. Dot the fish with bits of butter. Top the fish with bread crumbs.

Bake and make the sauce

  1. Bake until the fish is cooked through.

  2. Carefully remove the fish.

  3. Strain the gravy. Thicken the gravy.

  4. Stir in the shrimp, oysters, anchovy essence, and Harvey sauce. Warm the sauce.

  5. Pour the sauce around the fish.

Garnish and serve

  1. Garnish with lemon, crispy parsley, and fried bread or pastry.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cod
Forms the main body of the dish, cooking through gently in the oven.
Butter
Adds richness and moisture, and helps the crumb topping brown.
Bread crumbs
Form a crisp, golden topping that browns in the oven.
Flour
Dusted on the fish, it helps thicken the gravy as it cooks.
Shrimp
Add savory flavor and tender texture to the sauce.
Oysters
Add briny flavor and soft texture to the sauce.

The step that matters

Thicken the gravy. Flour-based gravy thickens as starch granules swell in hot liquid; if it is not simmered long enough, the sauce stays thin, and adding shellfish too early or overheating can toughen it.

Swap the white pepper

How well each one fits the dish's main ingredients (butter, onion, clove, pepper, flour, bread, shrimp):

  1. Garlicfits better
  2. Parsleyfits better
  3. Thymefits better
  4. White pepperthe original

Fit is the average pairing score against butter, onion, clove, pepper, flour, bread, shrimp. Candidates are from the same food group and used in at least 100 recipes.
