Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Hashed Calf’s Head

Ingredients

Directions

Prepare the head and gravy

  1. Parboil the calf's head, then bone it and cut the meat into slices.

  2. Boil the bones with some beef to make a fine gravy.

  3. Strain the gravy, then add the juice of two lemons, pepper, salt, and pounded mace.

Simmer and make the fritters

  1. Simmer the calf's head in the gravy for two hours over low heat, lightly flouring the meat to thicken the gravy.

  2. For the brain fritters, clean and slice the brains, boil them with a little salt, then chop them with bread crumbs.

  3. Mix the chopped brains with the yolks of two eggs, season, and fry them.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Lightly dusted on the meat, it helps thicken the gravy as the meat simmers.
Egg yolks
Bind the chopped brains together so the fritters hold their shape when fried.
Bread crumbs
Absorb moisture and give the chopped brain mixture body so it can be shaped and fried.
Lemons
Add acidity that brightens the rich gravy and balances its savoury flavour.

Swap the mace

How well each one fits the dish's main ingredients (beef, lemon, pepper, flour, bread, egg):

  1. Parsleyfits better
  2. Marjoramfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against beef, lemon, pepper, flour, bread, egg. Candidates are from the same food group and used in at least 100 recipes.
