Veal Cutlets Stewed with Celery

Ingredients

Directions

  1. Cut the cutlets from the neck of the veal, ensuring they are shaped well.

  2. Make gravy from the bones by stewing them with the celery, salt, pepper, and onion.

  3. Strain the gravy and return the celery to it.

  4. Thicken the gravy with butter and flour, then pour it hot over the cutlets.

  5. Stew the cutlets until tender and garnish with lemon and fried forcemeat balls.
