Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and set into a tender structure when fried.
Flour
Provides body so the batter holds its shape as a thick mixture.
Milk
Adds moisture and loosens the flour into a workable batter.
White sugar
Adds sweetness and helps the fritters brown in the hot fat.
Blanched almonds
Add richness and a nutty texture to the batter.

The step that matters

Drop batter into hot lard. If the lard is not hot enough, the batter absorbs fat and turns greasy instead of crisping. Hot fat seals the outside quickly so the fritters keep their shape and brown evenly.
